Baking With Allergies
You’ll notice all of my products are labeled as Gluten & Dairy Sensitive versus Gluten & Dairy Free.
Due to my products being baked in a home kitchen that has traffic from other people, I cannot legally claim that my goods are completely free of allergens. I would need a certified commercial kitchen that has inspections to accomplish that badge, which is a goal, but not yet a reality.
It is my policy to operate with honesty and transparency and I am beyond extremely careful when it comes to making my baked goods. I myself can eat them fearlessly as someone who’s been completely gluten and dairy free for well over a decade due to my extreme allergic reactions.
Here are the steps I’ve taken to ensure my goods are as safe as possible.
I only use certified gluten and dairy free/vegan ingredients, or naturally so.
My home is completely pet-free, kid-free, and smoke-free.
Before I pull out my equipment and ingredients, every surface is wiped down 3 times; once with a soapy sponge to get all the grime and big stuff, twice with a clean water sponge to get all the soap, and finally a third time with sanitizing wipes to be fully sure the area is as clean as possible.
All ingredients and equipment are kept separate from our other food and stored on it’s own shelving unit, and there is zero sharing when it comes to personal baking.
I purchased brand new equipment for my bakery that has never been used in my home cooking under any circumstances. Although I live a gluten and dairy free lifestyle, I wanted to do all I could to ensure that my goods are as safe as possible.
I have separate soap, sponges, and other cleaning products that are never used for anything other than bakery equipment. Those with allergies know that unfortunately even after being washed, our cooking utensils, pots, pans, and even dishcloths used to dry them, often hold on to those allergens. A risk I don’t like to take even in my daily home cooking, much less when making food for other people.
I have a designated baking uniform (super comfy scrubs) that I only use when baking products that are for sale. Again, allergens have a way of clinging to everyday things and one of the best ways to prevent that is by wearing clothes that haven’t seen other baking days.
